Growing up, one of the treats my mom would make are peanut butter balls. It's safe to say there's a soft spot in my heart reserved for peanut butter and chocolate. I managed to come up with a way to feed this peanut butter chocolate addiction while also fitting in some extra healthy ingredients. I hope you enjoy these delicious, crunchy, satisfying, protein filled bundles of joy as much as I do!
Peanut Butter Balls
- 3 tbsp coconut oil
- 1 cup smooth peanut butter
- 2 scoops protein powder (I use the Kaizen vanilla vegan protein powder)
- 1/3 cup ground nuts
- 1 tsp vanilla
- 3 tbsp hemp hearts
- 2 tbsp icing sugar
- 1/2 cup toasted coconut
Chocolate coating:
- 1 1/2 cups dark chocolate
- 2 tsp coconut oil
- Himalayan pink salt, for sprinkling on top
Instructions
In a large bowl, melt coconut oil. Stir in peanut butter. Stir in remaining ingredients until well combined.
Refrigerate for 1 hour, or until slightly hardened.
Roll into 1 inch balls, and place on parchment paper lined baking sheet. Freeze for 2-3 hours until completely hardened.
Melt chocolate over low heat with coconut oil.
Coat the balls with chocolate using a fork to ensure completely covered. Place on same parchment lined baking sheet. Sprinkle with pink salt. Freeze for another hour, or until chocolate is hardened. Remove from freezer, these yummy treats are ready to eat!
